I am really backwards this weekend. Yesterday felt so much like my usual Sunday and today was definitely a "Saturday" kind of day. Oh well, at least I got two wonderful days in this weekend. All that matters.
I slept in a little (and by that, I mean 6:45am). I had to be out the door this morning for a charity walk that I was doing, but I wanted to be sure I had a good breakfast before.
I was planning on making fruit/yogurt parfait and some PB toast, but I was so chilly when I woke up that all I wanted was a warm bowl of oats.
I made my normal base
- 1/4 Cup Oats
- 2 TBL Multigrain Hot Cereal
- 1 tsp Chia
- 1/2 Ripe Banana (mashed)
- 1/3 Cup Unsweetened Coconut Milk
- Toppings: Raspberries, Dark Chocolate PB, Raspberry Jam, Dollop of Chocolate Oikos, and Granola
Just a spoon of the Chocolate Oikos was all this needed to make it super creamy and decadent. You may be wondering what I did with the rest of the yogurt in the container. Don't worry, I would NEVER waste such a glorious thing, it saves well for dessert later.
Served with fresh berries and coffee of course.
Glad I went with the oats this morning. This warmed me right up and fueled me for the 4 mile walk I had ahead of me.
The walk went well. I took Sammy and he was such a trooper. He loves to go with me to these Charity events and I'm working on getting him conditioned for my next 5k. Haha, his little legs were not made to run far, but he can certainly keep up.
When I got home, I waited for my Dad to arrive so that we could spend the afternoon together. His birthday is next weekend, but since he is booked solid, I grabbed the closest thing I could get and decided to do his birthday gift a little early.
Originally, I was hoping to take him for a picnic and a hike (something we both LOVE doing) but the weather was quite chilly and we were both feeling tired and run down so I changed the plans and decided to spend a relaxing afternoon at City Island for a picnic and a baseball game.
I packed a lovely spread, compliments of Wegmans.

We ate our lunch by the river and then headed into the ball park for the afternoon game.
Our seats were great! It actually worked out perfectly, because last night, our friend Brian, texted Toly asking if we wanted free tickets to the game today. Him and Jen were planning on going but couldn't last minute and didn't want to waste the tickets. I think he was reading my mind because an hour before, I was just telling Toly that I think I wanted to take my dad to the game today. Thanks Brian!
Brian and Jen were not able to go, but Jen's parents were in town for the weekend and took Connor. Lucky us that we got to enjoy the game with them!
I loved spending the afternoon with my Dad and he was so grateful for his birthday gift. Love you dad!
When I got home, I crashed for a little on the couch and woke up starving! It was a bit early for dinner, so I calmed down my rumbling tummy with a small glass of oatmeal squares and almond milk. I realized soon after I had this snack, I wanted more and knew that I should just make a "real" dinner before I crushed my appetite with cereal and sugar.
Being that it was still quite chilly (we went from 90 degrees to 50 degrees) my mission for dinner was to make something that would warm me. Soup it was!

For some reason, while this was cooking, I got the weirdest craving for ketchup. I think I saw a commercial or something because I wanted it so badly all of a sudden. But, ketchup on soup doesn't really work, so I thought of what I could make so that I could eat it with ketchup.
Roasted Broccoli came to mind and then was made…..
Is it odd that I make broccoli just so that I can eat the ketchup? Maybe. Do I care? Not one bit!
To measure out the meal, I also toasted a small piece of TJ's Rustic Multigrain bread with pumpkin butter and a little goat cheese.
Well, this did the trick, not only did I satisfy my urgent Ketchup craving, I also am full, warm and happy.
And I do have that Chocolate Oikos in the freezer waiting for dessert! :)
